Asian-style raw food salad with shrimp and peanuts

Here is a crisp, healthy and fresh salad for a summer lunch or for a day when the summer is long gone but you crave something with the essence of summer!

In this recipe I have served the salad with shrimp and peanuts but the recipe could easily be transformed into different types of salad like spicy beef, pulled pork or chicken and it is also a great side dish to everything from steak to fish or on its own on the buffet table!

This is what you need for the raw food salad:

  • Shrimp
  • Peanuts
  • Cilantro
  • ½ red chilli
  • Spring onion
  • Carrots
  • White cabbage
  • Cucumber

And this is what you need for the dressing:

  • ½ red chilli
  • Spring onion
  • A handful of cilantro leaves
  • 2 tablespoons fish sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sunflower oil or similar
  • The juice of 1 lime
  • 1 tablespoon brown sugar

Here is how you do it:

  1. To start, peel the prawns and put them aside (If you have gotten frozen ones, spread them out on some paper to defrost about an hour before you start cooking).
  2. Now, to the dressing! Start by chopping the spring onion and the chilli (here you can choose to remove the seeds or keep them, depending on how strong you want it) and put them in a bowl together with a handful of cilantro leaves and the juice from the lime.
  3. Add the fish sauce, sesame oil and natural oil (I have used sunflower oil but you can absolutely replace it with another natural cooking oil). At this point you need to try the dressing and see if you need to add some salt, some more fish sauce or maybe some more lime until you get the balance right!
  4. The salad is pretty straightforward. Remove the watery seeds from the cucumber and chop it into pieces of a size you like. Peel the top layer of your carrots and throw it away. Keep peeling the carrots into a salad bowl and you will get nice and thin sheets of carrot, perfect for a raw salad! Slice the cabbage as thin as you can (think coleslaw size here), finely chop the chilli and the spring onion and mix all the veg together in the bowl together with the rest of the cilantro leaves.
  5. Now to the serving! It’s easy: Put the salad on a plate, add the shrimps on top, drizzle it with the dressing and take a handful of salted peanuts and sprinkle over the salad! Maybe add a couple of extra cilantro leaves to make it pretty and then you are done!
