swedish summer salmon

I am having a hard time thinking of a dish that captures the Swedish summer as good as this one. This is easy to make even if it looks and tastes pretty fancy if you ask me and the dish could be eaten as a simple summer lunch or would be a perfect contribution to the midsummer celebration or why not a garden party or picnic!

Here is what you need for about 4 people:

400g cold smoked salmon per person

Half a cucumber (peeled and with the watery seeds removed)

8 radishes (cleaned and sliced in thin slices)

4 tablespoons capers

4 tablespoon finely grated horseradish

3 tablespoons olive oil

Half a lemon

A few branches of fresh dill

New potatoes

Here is how you do it:

1, Put the potatoes to a boil.

2, Prepare the lemon oil by grating lemon peel into a bowl (avoid the white as much as you can and try your best to only get the yellow part!) and then squeeze the lemon juice in there as well. Now mix it with the olive oil and your easy dressing i done.

3, Slice the salmon in thin slices (if it did not already come like that in the package!) and spread them out on a plate. Cut the cucumber in small dices and slice the radishes in thin slices. Spread them evenly over the
salmon together with the capers and the horseradish. Now give the plate a nice touch of the lemon oil and top it of with the dill and you are ready to serve together with the potatoes and maybe some sour crème and a cold beer! Enjoy!
