Fresh and Fragrant Asian Dressing

 

 

This dressing right here is a flavour bomb and it can be used for dressing lovely salads like this raw food salad with prawns, as a dipping sauce for summer rolls or to simply add some freshness and an asian twist to your steak, pork or fish.

This is what you need for the dressing:

  • ½ red chilli
  • Spring onion
  • A handful of cilantro leaves
  • 2 tablespoons fish sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sunflower oil or similar
  • The juice of 1 lime
  • 1 tablespoon brown sugar

Now, here is how you make it!

Start by chopping the spring onion and the chilli (here you can choose to remove the seeds or keep them, depending on how strong you want it) and put them in a bowl together with a handful of cilantro leaves and the juice from the lime.

Add the fish sauce, sesame oil and natural oil (I have used sunflower oil but you can absolutely replace it with another natural cooking oil). At this point you need to try the dressing and see if you need to add some salt, some more fish sauce or maybe some more lime until you get the balance right!
